{"id":5997,"date":"2022-04-11T11:04:50","date_gmt":"2022-04-11T11:04:50","guid":{"rendered":"https:\/\/www.chanintr.com\/pages\/?post_type=journal&#038;p=5997"},"modified":"2022-05-03T06:01:44","modified_gmt":"2022-05-03T06:01:44","slug":"a-green-cuisine","status":"publish","type":"journal","link":"https:\/\/www.chanintr.com\/pages\/journal\/a-green-cuisine\/","title":{"rendered":"A Green Cuisine"},"content":{"rendered":"\n<p>Text by Teerin Julsawad<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>In 2020, the <a href=\"https:\/\/guide.michelin.com\/en\/restaurants\">Michelin Guide<\/a> \u2014 world-renowned for its coveted stars \u2014 launched an original initiative: that of awarding a Michelin <a href=\"https:\/\/guide.michelin.com\/th\/en\/article\/features\/what-is-the-michelin-green-star-and-how-do-you-earn-one-th\">Green Star<\/a> to those establishments making exemplary efforts towards greater respect for the environment.<\/p>\n\n\n\n<p>The emblem celebrates excellence in sustainable gastronomy by honoring restaurants on the cutting edge of the industry with their sustainable practices. However, inspectors are may consider factors such as: the provenance of the ingredients; the use of seasonal produce; the restaurant\u2019s environmental footprint; food waste systems; general waste disposal and recycling; resource management; and the communication between the team and the guests about the restaurant\u2019s sustainable approach.<\/p>\n\n\n\n<p>Ultimately, the Michelin Guide is looking for restaurants that champion and maintain a commitment to sustainable gastronomy.<\/p>\n\n\n\n<p>Only one restaurant in Thailand has been designated for this award. <a href=\"http:\/\/www.prurestaurant.com\/\">PRU<\/a> \u2014 which stands for \u201cplant, raise, understand\u201d \u2014 is a restaurant that provides a farm-to-table experience in Phuket, where it is part of the luxury resort <a href=\"https:\/\/trisara.com\/?utm_source=sdc&amp;utm_medium=cpc&amp;utm_campaign=search&amp;gclid=CjwKCAjwjZmTBhB4EiwAynRmD4M68snIXCO_J5NUVXjU76XifCTE0BRYDHSxuXDlzTekOX_XFfqWixoC94cQAvD_BwE&amp;gclsrc=aw.ds\">Trisara<\/a>. PRU sources its food primarily from Pru Jampa, their own farm that supplies vegetables, herbs and flowers, as well as from farmers and fishermen involved in sustainable practices. Other ingredients that make up the holistic, ecosystem-inspired menu are obtained from places across Thailand like Phang-Nga and Nakhon Phanom.<\/p>\n\n\n\n<p>Each season, PRU\u2019s very own research and development team travels to various regions in search of ingredients to evolve the menu and concept, producing new dishes and telling new stories with their meal.<\/p>\n\n\n\n<p>PRU remains to be the only restaurant in Thailand to be awarded this distinction;
